Eager to recreate a bit of the ol’ Beijing 味儿 we have such fond memories of, the 三帅兄 set out to recreate the particular blend of spices used at the 串儿 “restaurants” we frequented.

First off: 三帅兄, or “The 3 Handsome Brothers” is a fictitious Chuanr enterprise established in 2010 for the express purpose of spreading the gospel of the Chuanr through the use of pure deliciousness (a so-called “Soft Power” ploy of some effect).

A caveat: the recipe used in Beijing (or in Xinjiang and the Uighurs from whom this style of kebab originates) is bound to be quite a bit simpler than this one. However, I feel that this particular blend is more layered and complex, while still offering the instant hits of chili and cumin that you have — or will come to love.

Using grams (because being accurate is a good thing when balancing spices):

The 3 Handsome Brothers’ Shanzhai-style Chuanr recipe:

6 parts Cumin powder

4 parts Chili powder

3.5 parts MSG (Monosodium glutamate)1

3 parts sugar

2.5 parts Paprika powder

2 parts Fennel powder

1 part Ginger powder

If you’re a bit weak in the gob and find this to be too spicy, adjust the proportions of Paprika and Chili, keeping it at a total of 6.5 parts.

Mix it all together (making a lot of it doesn’t hurt) and roll the skewers in it, covering them completely. Lightly tap the skewers to shake off any excess, and pop them on the grill. Sprinkle some more spice on before you serve them. Lamb and Chicken are completely fantastic when grilled with this.

Serve it with copious amounts of beer, and enjoy!

孔帅傅

1: MSG is glutamate, which is extracted from seaweed and is completely natural, stabilized with salt, which is also completely natural. It’s delicious, and there have been no firm links between use of MSG and headaches or other hypochondriac “reactions”. Use it. Love it. Don’t overuse it.

Where does my Chinese language ability stand after two years of study? Where should it have been?
The short version: nowhere near where I want it to be.
As the semester wrapped up and the exam was over and done with, I was left with a nagging, pervasive feeling of not knowing enough, not having learnt enough.

Where does my Chinese language ability stand after two years of study? Where should it have been?

The short version: nowhere near where I want it to be.

As the semester wrapped up and the exam was over and done with, I was left with a nagging, pervasive feeling of not knowing enough, not having learnt enough.

I decided to check how many characters I could comfortably recognize the pinyin and rough meaning of. Armed with two sheets of paper that together comfortably fit the 2700 most commonly used Hanzi in a neat 25×54 grid, I set out with a felt marker to cross out those I was iffy about or just didn’t know. The first half of the first page was pretty comfortable. The second half was very spotty. The second sheet was altogether alien, aside from a few characters that occur in specific compound words (that I usually had no idea what meant). Out of the first 1350, I had 915 right. On the second sheet, that number was down to a paltry 176. I ended up at 1091/2700. Granted, this is me being pretty strict - there were a lot I recognized but chose not to “keep”.

As far as spoken Chinese or Kouyu is concerned, I’d rather not talk about it (heh). Grammar is still not very advanced, but I’ve stopped making silly errors.

The way I learnt English was through exposure coupled with interest. These two years, it has been interest and in most cases stupendously boring texts. The coming year, from the present and up until July next year, I will be reading a hell of a lot of Chinese. I have a few books (even though I can plow through several hundred pages a day of English or Norwegian, Chinese is a hard slog), a few Tintin comics left, as well as what the Internet offers. If I feel inspired, I might have a look at my old books from Peking University, and perhaps even some Classical Chinese.

My goals for this year of Redemptive Studies is quite simple:

Get through my books.

Learn over 90% of the 2700 characters. This means I will have to learn and retain at least 1500 in the coming year.

Learn to write longer texts without *constantly* checking Nciku or Wenlin; to basically develop a “gut” for Mandarin Chinese.

And they should be possible. I will be working full-time, saving money to go to China in the autumn of 2011.

My tentative plan is to stay in China (possibly Beijing) for a year while I continue studying on my own or with a tutor. After that year I might do the one-year unit the University of Oslo offers for more advanced studies.

1500 characters in a year shouldn’t be too hard? It’s only 30% more than what I spent two years learning.

As a certain Chairman would say, 愚公移山.
